These are our favorite! The batter keeps well in the fridge for a day or two.
Serves 4
1 1/2 cups butttermilk
2 eggs
1/2 cup butter, melted
1 tablespoon honey
1 teaspoon vanilla
1 1/2 cups all purpose flour
1/2 cup buckwheat flour (I have also used cornmeal)
2 tsp. Baking powder
1/2 teaspoon salt
Combine dry ingredients in a medium bowl and stir to combine with a whisk. Add the buttermilk, egg, honey and vanilla and stir to combine. Last, whisk in the melted butter.
Preheat a waffle iron and when ready, add a scant 1/2 cup batter to the iron. Cook until golden brown and crisp. Serve with warm maple syrup and plenty of butter.
