4 cups + 1 tbsp flour

2 tbsp baking powder

2 tsp salt

3/4 lb of butter cubed and frozen

4 eggs

2 cups roasted sweet potatoes, skin removed and pulp pureed

1 cup cold heavy cream

egg wash

Combine dry ingredients in mixer.

Add butter and mix until it is in pea sized pieces.

Add eggs, cream and sweet potato and mix until just combined.

Roll out to 1” thick and cut into 3” squares. Brush with egg wash and spread out on a parchment lined half sheet tray.

Bake at 375° for 20 min.
